Among Japanese black beef, we carefully select A4 rank beef with a good balance of high-quality lean meat and marbling. For example, the lean meat has a springy texture that makes you feel like you are eating meat, the loin has a rich marbled meat and deep sweetness, and the tongue has the distinctive tenderness that is unique to Japanese beef. Our professional eyes select the wagyu beef that is best suited for yakiniku.
Kofujin uses a high-quality roaster, but that's not the only key to making delicious yakiniku. While many yakiniku restaurants use wire mesh, Kofujin uses a cast iron net called a ross net. The net itself is thick, so it retains heat well and the meat doesn't stick easily, making it ideal for grilling Wagyu beef until it's plump.
A special sauce made from a blend of rich soy sauce, garlic, ginger, fruit, etc. Once the fat from the Wagyu beef has absorbed the sauce, it can be used to dip grilled vegetables in the sauce for a delicious meal.
